- 1 cup fresh lemon juice (about 6–7 lemons)
- 4 cups pure pineapple juice (fresh or cold-pressed)
- 1 cup near-boiling water
- 1 cup granulated sugar
- 4 cups very cold water
- Lemon slices, pineapple slices, and mint for garnish (optional)
Instructions
- Juice the lemons and strain to remove seeds and pulp.
- Pour lemon juice into a large pitcher and stir in the pineapple juice.
- Make the simple syrup by stirring sugar into near-boiling water until dissolved.
- Add the simple syrup to the pitcher and mix well.
- Stir in the cold water gradually, adjusting to taste.
- Refrigerate for 30 minutes and serve over ice.
- Garnish with lemon and pineapple slices if desired.
