  • 4 oz pineapple coconut juice
  • 1 tbsp honey or agave
  • Toasted shredded coconut (for rimming the glass)
  • Ice

Instructions

  • Rim the glass with honey and dip it in toasted coconut.
  • Place mint leaves and a lime wedge into the glass. Use a muddler to crush them.
  • Fill the glass with ice.
  • Add lime juice and rum over the ice.
  • Top with pineapple coconut juice.
  • Gently stir and garnish with extra mint, lime, and pineapple.
