  • 6 boneless skinless chicken thighs
  • 6 cloves garlic
  • ¼ cup soy sauce (low sodium)
  • ½ cup olive oil (divided)
  • 1 lime
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 cup cilantro
  • 2 jalapeños

Instructions

  1. In a large bowl, mix minced garlic, soy sauce, ¼ cup olive oil, lime juice, cumin, paprika, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for 12 to 24 hours.
  2. Blend mayonnaise, sour cream, lime juice, cilantro, jalapeños, garlic, salt, and pepper until smooth to make Aji Verde sauce.
  3. Heat remaining olive oil in a skillet over medium-high heat. Cook marinated chicken until golden brown and internal temperature reaches 165°F (about 3 to 4 minutes per side).
  4. Serve the grilled chicken drizzled with Aji Verde sauce or on the side.
