- 800g ripe yellow peaches, peeled and sliced
- 200g caster sugar
- 1 tbsp lemon juice (adjust to taste)
Instructions
- Prepare the Peaches – Wash, peel, and slice the peaches into eighths. Remove the pits.
- Blend the Ingredients – In a food processor or blender, combine the peaches and caster sugar. Blend until smooth, scraping down the sides as needed.
- Add Lemon Juice – Gradually mix in the lemon juice, tasting as you go to balance sweetness.
- Chill the Mixture – Transfer the mixture to a covered bowl and refrigerate for at least 2 hours.
- Freeze the Sorbet
- With an Ice Cream Maker: Churn according to the manufacturer’s instructions (about 20-25 minutes), then freeze for 2-3 hours.
- Without an Ice Cream Maker: Pour the mixture into a shallow dish and freeze for 1 hour. Stir with a fork to break up ice crystals, repeating every 30 minutes for 4 hours.
- Serve & Enjoy – Let the sorbet sit at room temperature for 5 minutes before scooping.
