Ingredients List

Main Ingredients:

  • 2 cups roasted peanuts (salted or unsalted, depending on preference)
  • 12 oz chocolate (dark, milk, or white, depending on preference)
  • 1 tablespoon coconut oil or butter (optional, for smoother melting and shinier finish)

Instructions

  • Prepare the Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat to prevent the peanut clusters from sticking. Set aside.
  • Melt the Chocolate: If using a microwave, place the chocolate and coconut oil or butter (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth. If using a double boiler, melt the chocolate and coconut oil or butter over simmering water, stirring constantly until smooth.
  • Mix in the Peanuts: Once the chocolate is melted, remove it from the heat and stir in the roasted peanuts. Mix until the peanuts are fully coated in chocolate.
  • Form the Clusters: Use a spoon or cookie scoop to drop spoonfuls of the peanut and chocolate mixture onto the prepared baking sheet. Space them about 1 inch apart to prevent them from sticking together.
  • Add Optional Toppings: If desired, sprinkle the clusters with sea salt or add any other toppings you like, such as toffee bits or dried cranberries.
  • Cool and Set: Place the baking sheet in the refrigerator for about 20 minutes, or until the clusters are completely set and the chocolate is firm.
  • Serve and Enjoy: Once the clusters are set, they’re ready to be enjoyed! Store any leftovers in an airtight container at room temperature or in the refrigerator, depending on your preference for chocolate texture.

Notes

  • Customize Your Chocolate: Experiment with different types of chocolate to find your favorite combination. Dark chocolate provides a rich, slightly bitter contrast to the sweetness of the peanuts, while milk chocolate offers a creamier, sweeter taste. White chocolate can be used for a completely different flavor profile, or try a mix of dark and milk chocolate for a balanced blend.
  • Add a Twist: To add an extra layer of flavor, consider sprinkling a little sea salt on top of your peanut clusters before they set. You can also add spices like cinnamon or chili powder to the melted chocolate for a unique twist.
  • Keep It Fresh: If you’re making Peanut Clusters ahead of time for an event, store them in the refrigerator to keep them fresh. They can also be stored at room temperature in a cool, dry place, but refrigeration helps them retain their texture and flavor longer.
  • Portion Control: Use a small cookie scoop to create evenly sized clusters, which ensures consistent cooking and setting times. This also helps with portion control, especially if you’re trying to keep track of calorie intake.
