Instructions

  • Prepare the Pan
    • Line a baking pan with parchment paper and set aside.
  • Heat the Peanut Butter Mixture
    • In a saucepan over medium heat, combine 1 cup of peanut butter, 1 cup of sugar, and 1 cup of light corn syrup.
    • Stir constantly until the mixture is smooth and begins to bubble. Avoid boiling the mixture to prevent burning.
  • Combine with Cereal
    • Remove the saucepan from heat.
    • Add 1 teaspoon of vanilla extract and stir to combine.
    • In a large mixing bowl, add 6 cups of crispy rice cereal.
    • Pour the hot peanut butter mixture over the cereal and quickly mix until all the cereal is evenly coated.
  • Spread in the Pan
    • Transfer the mixture to the prepared baking pan.
    • Use a spatula to spread it evenly, pressing down gently to ensure a uniform thickness.
  • Optional Chocolate Topping
    • If desired, sprinkle 1 cup of chocolate chips over the top while the mixture is still warm.
    • Allow the chocolate to melt slightly, then spread it evenly over the top with a spatula.
  • Cool and Set
