  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon kosher salt
  • 1 pinch ground nutmeg
  • ¼ cup (60 g) heavy whipping cream
  • 3 ounces vanilla yogurt
  • 1 large egg
  • 1 can (15.25 ounces) peaches, diced and juice reserved
  • Vegetable or canola oil, for frying

Glaze:

  • ¼ teaspoon vanilla extract
  • 36 teaspoons reserved peach juice

Instructions

Instructions

  1. Mix Dry Ingredients: Whisk together flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg in a medium bowl.
  2. Prepare Wet Ingredients: Beat the whipping cream, yogurt, and egg in a separate bowl.
  3. Combine Mixtures: Add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced peaches.
  4. Heat Oil: Heat oil in a frying pan or Dutch oven to 375°F using a candy thermometer.
  5. Fry the Fritters: Drop ¼ cup portions of batter into the oil. Fry 2-4 minutes per side, until golden brown. Remove and place on a paper towel-lined rack.
  6. Prepare the Glaze: Mix confectioners’ sugar, vanilla, and 3 teaspoons peach juice. Adjust consistency with more peach juice as needed.
  7. Glaze the Fritters: Drizzle the glaze over cooled fritters. Let set for 5-10 minutes before serving

Notes

Notes

  • For a thinner glaze, use water instead of peach juice.
  • Store fritters in an airtight container for up to 2 days, or freeze for longer storage.
