  • ½ cup light or dark brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • ¾ cup + 1 tablespoon all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoons light brown sugar, packed
  • ½ teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, room temperature
  • 2 oz cream cheese, room temperature
  • 1 cup powdered sugar
  • 2½ tablespoons heavy cream

Instructions

  1. Make Peach Jam: In a saucepan, combine cubed peaches, sugar, and lemon juice. Cook on medium heat until thickened. Stir in cornstarch mixed with water, cook until further thickened, then cool.
  2. Prepare Tangzhong: Whisk together water and flour in a saucepan until thick and paste-like; let cool.
  3. Mix Dough: Combine flour, sugar, yeast, salt, milk, egg, vanilla extract, and tangzhong in a stand mixer. Gradually add softened butter while kneading until smooth.
  4. Make Crumb Topping: Combine melted butter with flour, sugars, and cinnamon to create a crumbly texture; chill.
  5. Roll & Fill: Roll out dough into a rectangle, spread with brown sugar filling and peach jam; cut into strips and roll into swirls. Let rise again before baking.
  6. Bake: Preheat oven to 325°F (162°C). Bake rolls topped with crumb mixture until golden brown.
  7. Frost: Mix cream cheese and butter until smooth; add powdered sugar and heavy cream for desired consistency.
