Instructions

Prepare the Meatballs:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil coated with cooking spray.
  2. In a large mixing bowl, combine the garlic, parsley, Parmesan cheese, panko breadcrumbs, half-and-half, egg, salt, onion powder, and black pepper. Stir until well mixed.
  3. Add the ground chicken and mix gently until just combined (do not overmix).
  4. Shape the mixture into 20 meatballs (~2 tablespoons each) and place them on the prepared baking sheet, ensuring they are evenly spaced.
  5. Bake for 12-15 minutes, or until the meatballs reach an internal temperature of 165°F (74°C).

2. Make the Creamy Spinach Sauce:

  1. While the meatballs bake, melt the butter in a large skillet over medium heat.
  2. Add the minced garlic, flour, Italian seasoning, red pepper flakes, and salt. Stir continuously for 30 seconds to remove the raw flour taste.
  3. Slowly pour in the chicken broth and half-and-half, whisking to prevent lumps.

3. Combine and Serve:
