  • 7 to 9 pound beef brisket
  • 2 teaspoons minced garlic
  • 3 tablespoons fresh ground pepper
  • 1 teaspoon celery seed
  • 1 teaspoon ground ginger
  • 4 whole bay leaves, crumbled
  • One 12-ounce can tomato paste
  • 1 cup soy sauce
  • ½ cup Worcestershire sauce
  • 2 medium onions, thinly sliced
  • 3 tablespoons beer

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare two large sheets of heavy-duty aluminum foil and place the brisket on top.
  3. Rub minced garlic over the meat and season with the spice mixture of ground pepper, celery seed, ground ginger, and crumbled bay leaves.
  4. Mix tomato paste, soy sauce, and Worcestershire sauce; rub onto the brisket.
  5. Lay sliced onions on top and wrap tightly in foil.
  6. Roast fat side up in a roasting pan for about 4 hours.
  7. Open foil after 4 hours to expose onions; continue cooking for an additional hour.
  8. Reduce remaining sauce over medium heat with added beer before serving.
