  • 1½ cups dry orzo pasta
  • 2 Persian cucumbers
  • 2 cups cherry tomatoes
  • 1 cup cooked chickpeas
  • 4 ounces feta cheese
  • Red onion
  • Kalamata olives
  • Fresh herbs (basil/mint)
  • 1 recipe Greek Salad Dressing
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon oregano
  • ¼ teaspoon sea salt
  • Freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the orzo in salted boiling water until slightly past al dente. Drain and toss with olive oil to cool.
  2. In a bowl, whisk together red wine vinegar, lemon juice, oregano, and sea salt for the dressing.
  3. In a large bowl, combine cooled orzo with cucumbers, tomatoes, chickpeas, feta cheese, red onion, and olives. Drizzle dressing over the top and mix well.
