Ingredients

  • 4 skinless salmon fillets
  • 1 tsp salt divided
  • 1 tsp black pepper divided
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion finely chopped
  • 3 garlic cloves minced
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 oz baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan
  • Freshly ground black pepper for serving
  • Chili flakes for serving
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the salmon fillets with salt, pepper, garlic powder, and paprika.
  2. In a nonstick skillet over medium-high heat, add olive oil and butter. Sear the salmon for 3-4 minutes per side until golden brown. Remove from skillet.
  3. Lower heat to medium; sauté chopped onion and minced garlic until soft (about 2 minutes). Stir in thyme, salt, and pepper.
  4. Add the orzo; toast for 1 minute. Pour in chicken broth; bring to boil then reduce to simmer for about 8 minutes.
  5. Stir in spinach until wilted (2 minutes). Mix in lemon juice and Parmesan cheese before returning salmon to skillet.
  6. Heat through for an additional 2-3 minutes; serve warm.
