This One-Pot Chicken Parmesan Mac & Cheese combines crispy chicken, creamy cheese sauce, and tender pasta—all in a single pot! A perfect weeknight dinner that’s rich, cheesy, and loaded with flavor.

- 2 boneless, skinless chicken breasts (cubed)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 2 cups chicken broth
- 1 ½ cups milk
- 2 cups elbow macaroni
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup panko breadcrumbs (optional, for topping)
- 2 tablespoons butter (melted)
- Fresh basil (for garnish)
Instructions
- Cook the Chicken: Season cubed chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large pot over medium heat and cook the chicken until golden brown. Remove from the pot and set aside.
- Sauté the Garlic: In the same pot, add minced garlic and sauté until fragrant.
- Cook the Pasta: Pour in the chicken broth and milk, then bring to a simmer. Stir in the macaroni and cook until tender, about 10 minutes.
- Add Marinara & Cheese: Stir in marinara sauce, mozzarella, and Parmesan until creamy.
- Combine & Serve: Return the cooked chicken to the pot and mix well. Optionally, top with panko breadcrumbs mixed with melted butter and broil for a crispy topping.
- Garnish & Enjoy: Sprinkle with fresh basil and serve warm.
