  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • 1 cup uncooked brown rice
  • 2 cups low-sodium chicken broth
  • ½ cup corn (fresh or frozen)
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, season with salt and pepper, and cook until browned. Remove from skillet.
  2. In the same skillet, sauté onion, green bell pepper, red bell pepper, and zucchini until softened (about 5-7 minutes). Stir in garlic and cook for another minute.
  3. Add paprika and Italian herbs; then stir in brown rice and chicken broth. Bring to a boil.
  4. Reduce heat to low and simmer covered for 40-45 minutes until rice is tender.
