- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into ½-inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 1 ¼ lb sirloin steak, cut into ½-inch cubes
Instructions
- Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Add the cubed potatoes and season with garlic, thyme, oregano, salt, and pepper. Cook for 8–10 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
- Increase heat to medium-high. Add remaining ghee and steak cubes. Season lightly with salt and pepper. Sear for 2 minutes without stirring, then stir and cook for an additional 1–2 minutes until golden brown.
- Return the potatoes to the skillet and mix well. Adjust seasoning to taste.
- Garnish with freshly chopped parsley. Serve hot and enjoy!
