Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½-inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½-inch cubes

Instructions

  • Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  • Add the cubed potatoes and season with garlic, thyme, oregano, salt, and pepper. Cook for 8–10 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
  • Increase heat to medium-high. Add remaining ghee and steak cubes. Season lightly with salt and pepper. Sear for 2 minutes without stirring, then stir and cook for an additional 1–2 minutes until golden brown.
  • Return the potatoes to the skillet and mix well. Adjust seasoning to taste.
  • Garnish with freshly chopped parsley. Serve hot and enjoy!
