For the Chicken Filling:
- 2 cups cooked, shredded chicken
- 2 tablespoons butter
- 1 small onion, diced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- ½ cup heavy cream (or milk)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ cup frozen peas
For the Biscuit Topping:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 6 tablespoons cold butter, cubed
- ¾ cup buttermilk
Instructions
Step 1: Prepare the Filling
- Preheat the oven to 400°F (200°C).
- In a large skillet or Dutch oven, melt the butter over medium heat. Add onion, carrots, and celery, and cook until softened (about 5 minutes).
- Stir in garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the vegetables and stir for 1 minute to form a roux.
- Gradually whisk in chicken broth, followed by heavy cream, stirring constantly to avoid lumps.
- Add salt, pepper, and thyme. Simmer until thickened, about 5 minutes.
- Stir in shredded chicken and frozen peas. Remove from heat and pour into a greased 9×13-inch baking dish.
Step 2: Make the Biscuit Dough
- In a large bowl, whisk together flour, baking powder, and salt.
- Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in buttermilk until just combined. Do not overmix.
Step 3: Assemble & Bake
- Drop spoonfuls of biscuit dough evenly over the filling.
- Brush the biscuit tops with melted butter for a golden finish.
- Bake for 25–30 minutes, or until biscuits are golden brown and cooked through.
- Let cool for 5 minutes before serving.
