Description

These chewy and flavorful oatmeal raisin cookie bars are packed with oats, raisins, chocolate chips, and walnuts. Easy to bake and perfect for dessert or snacks!

 


Ingredients

  • 1 cup butter (room temperature)
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned (rolled) oats
  • 1/2 cup semi-sweet chocolate chips
  • 3/4 cup raisins
  • 1/2 cup walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper and lightly coat with nonstick spray.
  2. In a stand mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar for 2 minutes, until light and fluffy.
  3. Add eggs, vanilla extract, salt, cinnamon, baking soda, and baking powder. Mix until smooth, scraping the sides of the bowl as needed.
  4. Turn the mixer to low and gradually add the flour and oats. Mix until combined.
  5. Gently fold in the chocolate chips, raisins, and walnuts using a spatula.
  6. Spread the dough evenly into the prepared baking dish.
  7. Bake for 20–25 minutes, or until the edges are golden brown and the center is set.
  8. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into squares or rectangles as desired.
