Topping:

  • 2 cups whipping cream or whole cream
  • 1 can crushed pineapple, drained very well (1520 ounces)
  • 3 tablespoons reserved graham cracker crumbs (for garnish)

Instructions

  • Prepare the Cookie Base:
    • Mix 1½ cups graham cracker crumbs with melted butter until evenly combined.
    • Press the mixture firmly into the bottom of an 8-inch square or round baking dish.
    • Refrigerate the base while you prepare the cream filling.
  • Make the Cream Filling:
    • In a mixing bowl, cream the softened butter and powdered sugar until smooth and fluffy.
    • Add the egg (or pasteurized substitute) and beat until fully incorporated.
    • Mix in the vanilla extract.
    • Spread the cream filling evenly over the chilled cookie base.
  • Prepare the Topping:
    • Whip the cream in a chilled bowl until stiff peaks form.
    • Fold in the well-drained crushed pineapple until evenly mixed.
    • Spread the pineapple-cream mixture over the cream filling.
    • Sprinkle the top with 3 tablespoons of reserved graham cracker crumbs for garnish.
  • Chill and Serve:
    • Cover the dessert with plastic wrap and refrigerate for at least 5 hours or overnight.
