Cookie Base:
- 1½ cups graham cracker crumbs (divided)

Topping:
- 2 cups whipping cream or whole cream
- 1 can crushed pineapple, drained very well (15–20 ounces)
- 3 tablespoons reserved graham cracker crumbs (for garnish)
Instructions
- Prepare the Cookie Base:
- Mix 1½ cups graham cracker crumbs with melted butter until evenly combined.
- Press the mixture firmly into the bottom of an 8-inch square or round baking dish.
- Refrigerate the base while you prepare the cream filling.
- Make the Cream Filling:
- In a mixing bowl, cream the softened butter and powdered sugar until smooth and fluffy.
- Add the egg (or pasteurized substitute) and beat until fully incorporated.
- Mix in the vanilla extract.
- Spread the cream filling evenly over the chilled cookie base.
- Prepare the Topping:
- Whip the cream in a chilled bowl until stiff peaks form.
- Fold in the well-drained crushed pineapple until evenly mixed.
- Spread the pineapple-cream mixture over the cream filling.
- Sprinkle the top with 3 tablespoons of reserved graham cracker crumbs for garnish.
- Chill and Serve:
- Cover the dessert with plastic wrap and refrigerate for at least 5 hours or overnight.
- Slice and serve chilled. Enjoy!
