Description

A creamy, no-bake dessert that tastes just like a classic éclair! Made with layers of graham crackers, vanilla pudding, and chocolate frosting, this easy recipe is perfect for any occasion.


Ingredients

  • 2 (3.4 oz) packages instant vanilla pudding mix
  • 3 ½ cups milk
  • 1 (8 oz) container whipped topping, thawed
  • 1 box graham crackers
  • 1 can dark chocolate frosting


Instructions

  • In a large bowl, whisk together pudding mix and milk until smooth. Let it thicken for 5 minutes.
  • Gently fold in whipped topping until fully combined.
  • Line the bottom of a 9×13-inch baking dish with graham crackers, breaking them to fit as needed.
  • Spread half of the pudding mixture evenly over the crackers.
  • Add another layer of graham crackers and top with the remaining pudding mixture.
  • Finish with a third layer of graham crackers on top.
  • Microwave the chocolate frosting for 15-20 seconds, then stir until smooth. Spread evenly over the final graham cracker layer.
  • Cover and refrigerate for at least 8 hours (preferably overnight) before serving.

Notes

  • For homemade whipped cream: Beat 1 cup heavy cream with 2 tbsp powdered sugar until stiff peaks form.
  • For homemade chocolate frosting: Melt ½ cup butter, mix with 2 cups powdered sugar, ¼ cup cocoa powder, and ¼ cup milk. Stir until smooth.
  • Make ahead: Best made a day in advance for optimal texture.
