A creamy, no-bake dessert that tastes just like a classic éclair! Made with layers of graham crackers, vanilla pudding, and chocolate frosting, this easy recipe is perfect for any occasion.

- 2 (3.4 oz) packages instant vanilla pudding mix
- 3 ½ cups milk
- 1 (8 oz) container whipped topping, thawed
- 1 box graham crackers
- 1 can dark chocolate frosting
Instructions
- In a large bowl, whisk together pudding mix and milk until smooth. Let it thicken for 5 minutes.
- Gently fold in whipped topping until fully combined.
- Line the bottom of a 9×13-inch baking dish with graham crackers, breaking them to fit as needed.
- Spread half of the pudding mixture evenly over the crackers.
- Add another layer of graham crackers and top with the remaining pudding mixture.
- Finish with a third layer of graham crackers on top.
- Microwave the chocolate frosting for 15-20 seconds, then stir until smooth. Spread evenly over the final graham cracker layer.
- Cover and refrigerate for at least 8 hours (preferably overnight) before serving.
Notes
- For homemade whipped cream: Beat 1 cup heavy cream with 2 tbsp powdered sugar until stiff peaks form.
- For homemade chocolate frosting: Melt ½ cup butter, mix with 2 cups powdered sugar, ¼ cup cocoa powder, and ¼ cup milk. Stir until smooth.
- Make ahead: Best made a day in advance for optimal texture.
