  • 23 cups baby spinach leaves
  • ⅔ cup shredded mozzarella cheese

  • 1 teaspoon butter
  • ¼ teaspoon dried thyme
  • 1 teaspoon olive oil
  • ½ teaspoon garlic powder
  • Freshly ground black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the Oven to 450°F.
  2. Cook the Mushrooms: Sauté in a skillet over high heat. Once browned, add butter and thyme. Remove and set aside.
  3. Wilt the Spinach: Cook with olive oil, garlic powder, and salt until wilted. Set aside.
  4. Prepare the Ricotta Mixture: Mix ricotta, salt, Italian seasoning, and basil in a bowl.
  5. Roll Out the Dough: Divide into two portions and stretch into thin rounds.
  6. Assemble the Pizza:
    • Spread the ricotta mixture over the dough.
    • Add the cooked mushrooms and spinach.
    • Sprinkle mozzarella cheese on top.
    • Add red pepper flakes and black pepper.
  7. Bake for 11-12 minutes until golden and crispy.
  8. Slice and Serve Immediately.
