For the Dough:
- 1.5 lb pizza dough (store-bought or homemade)
For the Cheese Mixture:
- 1 cup ricotta cheese
- ½ teaspoon salt
- ½ teaspoon Italian seasoning
- ½ teaspoon dried basil
For the Toppings:
- 1 package button mushrooms, sliced
- 2–3 cups baby spinach leaves
- ⅔ cup shredded mozzarella cheese
For Cooking & Seasoning:
- 1 teaspoon butter
- ¼ teaspoon dried thyme
- 1 teaspoon olive oil
- ½ teaspoon garlic powder
- Freshly ground black pepper
- ½ teaspoon red pepper flakes (optional)
Instructions
- Preheat the Oven to 450°F.
- Cook the Mushrooms: Sauté in a skillet over high heat. Once browned, add butter and thyme. Remove and set aside.
- Wilt the Spinach: Cook with olive oil, garlic powder, and salt until wilted. Set aside.
- Prepare the Ricotta Mixture: Mix ricotta, salt, Italian seasoning, and basil in a bowl.
- Roll Out the Dough: Divide into two portions and stretch into thin rounds.
- Assemble the Pizza:
- Spread the ricotta mixture over the dough.
- Add the cooked mushrooms and spinach.
- Sprinkle mozzarella cheese on top.
- Add red pepper flakes and black pepper.
- Bake for 11-12 minutes until golden and crispy.
- Slice and Serve Immediately.

- Red pepper flakes are optional for a spicy kick.
- Adding dollops of ricotta before baking creates a creamier texture.
- A sprinkle of Parmesan or a drizzle of olive oil after baking enhances the flavor.
