Brownie Base:
- 1 box brownie mix OR:
- ½ cup melted butter
- 1 ½ cups granulated sugar
- 1 ½ tsp vanilla extract
- 2 large eggs
- ¾ cup all-purpose flour
- ¼ tsp salt
- ½ cup unsweetened cocoa powder
- ½ cup semi-sweet chocolate chips
Coconut Layer:
- 1 ⅓ cups sweetened condensed milk
- 4 ½ cups sweetened coconut flakes
- 1 cup powdered sugar
Ganache Topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy whipping cream
- 1 tbsp butter
Instructions
Step 1: Prepare the Brownie Base
- Preheat oven to 350°F and grease a 9×9 pan. Line with parchment paper.
- If using a box mix, prepare as directed.
- For homemade brownies: Combine melted butter, sugar, and vanilla. Add eggs one at a time. Mix dry ingredients (flour, cocoa, salt), then combine with wet ingredients. Fold in chocolate chips.
- Spread batter into the pan and bake for 22-26 minutes. Cool completely.
Step 2: Make the Coconut Layer
- Mix condensed milk, coconut flakes, and powdered sugar in a bowl.
- Spread the mixture evenly over the cooled brownie base.
Step 3: Prepare the Ganache Topping
- Heat cream and butter in a saucepan until just simmering. Pour over chocolate chips and let sit 4 minutes. Stir until smooth.
- Spread ganache over the coconut layer.
Step 4: Cool and Set
- Let cool at room temperature for 30 minutes, then refrigerate for at least 1 hour before slicing.
