Description

These Mounds Brownies combine a fudgy brownie base, a chewy coconut layer, and a silky chocolate ganache topping for the ultimate indulgent dessert.

Brownie Base:

  • 1 box brownie mix OR:
    • ½ cup melted butter
    • 1 ½ cups granulated sugar
    • 1 ½ tsp vanilla extract
    • 2 large eggs
    • ¾ cup all-purpose flour
    • ¼ tsp salt
    • ½ cup unsweetened cocoa powder
    • ½ cup semi-sweet chocolate chips

Coconut Layer:

  • 1 ⅓ cups sweetened condensed milk
  • 4 ½ cups sweetened coconut flakes
  • 1 cup powdered sugar

Ganache Topping:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • 1 tbsp butter

Instructions

Step 1: Prepare the Brownie Base

  1. Preheat oven to 350°F and grease a 9×9 pan. Line with parchment paper.
  2. If using a box mix, prepare as directed.
  3. For homemade brownies: Combine melted butter, sugar, and vanilla. Add eggs one at a time. Mix dry ingredients (flour, cocoa, salt), then combine with wet ingredients. Fold in chocolate chips.
  4. Spread batter into the pan and bake for 22-26 minutes. Cool completely.

Step 2: Make the Coconut Layer

  1. Mix condensed milk, coconut flakes, and powdered sugar in a bowl.
  2. Spread the mixture evenly over the cooled brownie base.

Step 3: Prepare the Ganache Topping

  1. Heat cream and butter in a saucepan until just simmering. Pour over chocolate chips and let sit 4 minutes. Stir until smooth.
  2. Spread ganache over the coconut layer.

Step 4: Cool and Set

  1. Let cool at room temperature for 30 minutes, then refrigerate for at least 1 hour before slicing.
