  • 8 ounces egg noodles or rice noodles
  • 1 pound flank steak, thinly sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 large carrot, julienned
  • 1 bell pepper, thinly sliced
  • 4 green onions, chopped
  • For the sauce: soy sauce, hoisin sauce, brown sugar, rice vinegar, sesame oil

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. Coat flank steak slices with cornstarch and let rest for 10 minutes.
  3. In a large skillet or wok heated over medium-high heat with vegetable oil, stir-fry beef until browned (3-4 minutes). Remove from skillet.
  4. Sauté garlic, ginger, carrot, and bell pepper in the same skillet until tender-crisp (3-4 minutes).
  5. Combine sauce ingredients in a bowl and whisk until smooth.
  6. Return beef to the skillet with vegetables; add sauce and cook for an additional 2 minutes.
  7. Toss in cooked noodles until well coated.
  8. Garnish with green onions and serve hot.
