Ingredients

  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g cold unsalted butter, cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions

  1. In a mixing bowl, combine flour and powdered sugar. Rub in cold butter until crumbly. Mix in egg yolk; add cold water if needed to form dough.
  2. Roll out dough to about 0.5 cm thick; cut into circles for pie bases.
  3. Fit each circle into muffin tins and prick the base with a fork.
  4. In another bowl, combine diced apple, mixed berries, sugar, and lemon juice; mix well.
  5. Fill each crust with the fruit mixture without overfilling.
  6. Preheat oven to 180°C (350°F) and bake for 25–30 minutes until golden brown.
  7. Cool slightly before serving.
