Ingredients
- 160 g all-purpose flour
- 60 g powdered sugar
- 115 g cold unsalted butter, cubed
- 1 egg yolk
- 1 medium apple, peeled and diced
- 80 g mixed berries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
Instructions
- In a mixing bowl, combine flour and powdered sugar. Rub in cold butter until crumbly. Mix in egg yolk; add cold water if needed to form dough.
- Roll out dough to about 0.5 cm thick; cut into circles for pie bases.
- Fit each circle into muffin tins and prick the base with a fork.
- In another bowl, combine diced apple, mixed berries, sugar, and lemon juice; mix well.
- Fill each crust with the fruit mixture without overfilling.
- Preheat oven to 180°C (350°F) and bake for 25–30 minutes until golden brown.
- Cool slightly before serving.
