  • 1 box store-bought pie dough (2 sheets)
  • 2 tbsp unsalted butter
  • 2 1/2 cups finely chopped Fuji or Honeycrisp apples
  • 1/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • Juice of 1/2 lemon
  • 1/2 tsp cornstarch (mixed with water)

Instructions

  1. Bring pie dough to room temperature.
  2. Melt butter in a saucepan over medium heat; add apples, brown sugar, cinnamon, and lemon juice. Cook until apples are tender (5-7 minutes).
  3. Mix cornstarch and water; add to filling to thicken. Let it cool.
  4. Preheat oven to 400°F and line a baking sheet with parchment paper.
  5. Roll out dough on a floured surface and cut into shapes.
  6. Assemble by placing half the shapes on the baking sheet, adding filling, brushing edges with egg wash, and topping with vented shapes.
  7. Seal edges with a fork and brush tops with egg wash.
  8. Sprinkle with cinnamon sugar topping and bake for 12-14 minutes until golden brown.
  9. Cool for 5 minutes before serving.
