  • 2 large eggs
  • 1 ½ cups milk
  • 2 tablespoons melted butter
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • Sour cream
  • Chopped chives

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat. Pour about ¼ cup of batter into the skillet and swirl to spread evenly. Cook until golden brown (1-2 minutes), then flip and cook for another minute. Set aside and repeat with remaining batter.
  3. In a large skillet, cook ground beef over medium heat until browned; drain excess fat. Stir in seasonings and parsley; cook for an additional 2-3 minutes.
  4. To assemble, place a few tablespoons of filling on one half of each crepe and fold over to enclose the filling.
  5. Garnish with sour cream and chopped chives before serving.
