  • 2 cups sweet corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ½ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons olive oil
  • 1 cup crumbled cotija cheese

Instructions

  1. Cook the fusilli pasta according to package instructions until al dente. Drain and cool.
  2. If using fresh corn, grill until lightly charred; otherwise skip this step.
  3. In a large bowl, combine cooked pasta with sweet corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  4. In a separate bowl, whisk together lime juice and spices with mayonnaise and sour cream until smooth.
  5. Pour dressing over the pasta mixture and toss gently until evenly coated.
  6. Refrigerate for at least 30 minutes before serving. Top with cotija cheese just before enjoying.
