- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- ½ cup red onion, finely chopped

- 2 limes, juiced
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons olive oil
- 1 cup crumbled cotija cheese
Instructions
- Cook the fusilli pasta according to package instructions until al dente. Drain and cool.
- If using fresh corn, grill until lightly charred; otherwise skip this step.
- In a large bowl, combine cooked pasta with sweet corn, cherry tomatoes, bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together lime juice and spices with mayonnaise and sour cream until smooth.
- Pour dressing over the pasta mixture and toss gently until evenly coated.
