Description

  • 4 ears fresh corn (about 2 ½ cups kernels)
  • ⅓ cup fine cornmeal
  • ⅓ cup white whole wheat flour
  • ½ teaspoon baking powder
  • 1 teaspoon chili powder

  • ½ teaspoon kosher salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup sliced chives or scallions
  • 3 teaspoons lime juice, divided
  • 1 cup crumbled queso fresco, divided
  • 4 teaspoons olive oil

Cilantro Lime Yogurt Sauce:

  • ½ cup plain yogurt
  • 2 teaspoons lime juice
  • 2 tablespoons chopped cilantro

Optional Garnishes:

  • Sliced chives or scallions
  • Chopped cilantro

Instructions

  • Char the Corn: Grill corn on a medium-high grill pan, turning occasionally, until charred (8–10 minutes). Cool and cut kernels from the cob.
  • Mix the Batter: In a large bowl, combine cornmeal, flour, baking powder, chili powder, garlic powder, and salt. In a small bowl, whisk egg and milk. Pour wet mixture into dry ingredients and mix until just combined.
  • Add Flavor: Stir in 2 cups of corn, 2 teaspoons lime juice, ¾ cup queso fresco, and chives.
  • Prepare Topping: Mix ½ cup corn, ¼ cup queso fresco, 1 teaspoon lime juice, and a pinch of salt.
  • Cook the Fritters: Heat a skillet over medium heat. Add a teaspoon of olive oil and drop spoonfuls of batter into the pan, flattening slightly. Cook 3–4 minutes per side until golden brown. Repeat with remaining batter.
  • Make the Sauce: Stir yogurt, lime juice, and cilantro together in a small bowl.
  • Assemble and Garnish: Drizzle yogurt sauce over fritters, add corn topping, and garnish with extra chives and cilantro.
