- 1 large egg

Cilantro Lime Yogurt Sauce:
- ½ cup plain yogurt
- 2 teaspoons lime juice
- 2 tablespoons chopped cilantro

Instructions
- Char the Corn: Grill corn on a medium-high grill pan, turning occasionally, until charred (8–10 minutes). Cool and cut kernels from the cob.
- Mix the Batter: In a large bowl, combine cornmeal, flour, baking powder, chili powder, garlic powder, and salt. In a small bowl, whisk egg and milk. Pour wet mixture into dry ingredients and mix until just combined.
- Add Flavor: Stir in 2 cups of corn, 2 teaspoons lime juice, ¾ cup queso fresco, and chives.
- Prepare Topping: Mix ½ cup corn, ¼ cup queso fresco, 1 teaspoon lime juice, and a pinch of salt.
- Cook the Fritters: Heat a skillet over medium heat. Add a teaspoon of olive oil and drop spoonfuls of batter into the pan, flattening slightly. Cook 3–4 minutes per side until golden brown. Repeat with remaining batter.
- Make the Sauce: Stir yogurt, lime juice, and cilantro together in a small bowl.
- Assemble and Garnish: Drizzle yogurt sauce over fritters, add corn topping, and garnish with extra chives and cilantro.
