Mexican Shrimp Cocktail, also known as Coctel de Camarones, is a refreshing, flavorful appetizer or light meal that’s perfect for warm weather. Combining tender shrimp with a tangy tomato-based sauce, fresh vegetables, and a hint of spice, this dish is ideal for summer gatherings, picnics, or as a light starter for a Mexican-themed meal.

  • 1 pound large shrimp, peeled and deveined
  • 1 cup diced tomatoes
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped celery
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1 tablespoon hot sauce (adjust to taste)
  • 1 avocado, diced
  • Salt and pepper to taste
  • Lime wedges, for garnish
  • Tortilla chips or saltine crackers, for serving

Instructions

  1. Cook the Shrimp:
    • Bring a large pot of salted water to a boil.
    • Add the shrimp and cook for 2-3 minutes, until pink and opaque.
    • Drain and transfer shrimp to an ice bath to cool.
    • Once cooled, chop the shrimp into bite-sized pieces.
  2. Prepare the Sauce:
    • In a large mixing bowl, combine the tomato juice, ketchup, hot sauce, and lime juice.
    • Mix well until all ingredients are fully incorporated.
  3. Combine Ingredients:
    • Add the diced tomatoes, red onion, cilantro, and celery to the sauce.
    • Stir to combine.
  4. Add the Shrimp:
    • Fold the chopped shrimp into the mixture, ensuring it is evenly distributed.
  5. Season and Chill:
    • Season with salt and pepper to taste.
    • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve:
    • Before serving, gently fold in the diced avocado.
    • Garnish with lime wedges and additional cilantro if desired.
    • Serve with tortilla chips or saltine crackers.
