Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice
  • 1 can black beans (15 ounces)
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 2 cups chicken broth
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • salt
  • black pepper
  • chili powder
  • cumin
  • garlic powder

Instructions

  1. In a large skillet over medium heat, heat olive oil and cook seasoned chicken pieces until browned (5-7 minutes). Set aside.
  2. Toast the rice in the same skillet for 1-2 minutes. Add black beans, diced tomatoes, chicken broth, and corn; bring to a boil.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  4. Fluff rice with a fork and stir in the cooked chicken. Sprinkle cheese on top and cover until melted.
  5. Garnish with cilantro and serve with lime wedges.
