- 1 tablespoon olive oil
- 1 cup long-grain white rice
- 1 can black beans (15 ounces)
- 1 can diced tomatoes with green chilies (10 ounces)
- 2 cups chicken broth
- 1 cup corn kernels
- 1 cup shredded cheddar cheese

Instructions
- In a large skillet over medium heat, heat olive oil and cook seasoned chicken pieces until browned (5-7 minutes). Set aside.
- Toast the rice in the same skillet for 1-2 minutes. Add black beans, diced tomatoes, chicken broth, and corn; bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
- Fluff rice with a fork and stir in the cooked chicken. Sprinkle cheese on top and cover until melted.
