  • 1 teaspoon garlic powder

  • 1 teaspoon dried mint
  • ½ teaspoon paprika
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon
  • Olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine ground chicken, salt, pepper, onion powder, garlic powder, oregano, mint, paprika, egg, breadcrumbs, Parmesan cheese, parsley, and lemon zest. Mix until just combined.
  2. Preheat your oven to 400°F (200°C). Shape the mixture into small meatballs (about 1-inch in diameter) and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a large skillet over medium heat. Cook meatballs in batches until browned on all sides (approximately 5–7 minutes). Transfer back to the baking sheet.
