- 1 ½ lb white fish fillet (such as cod or halibut, 1–1 ½ inches thick)
- Kosher salt and ground black pepper (to taste)
- 3 tablespoons extra virgin olive oil (plus more for brushing the dish)
- Juice of ½ lemon (plus more for serving)
- 8 ounces cherry tomatoes (halved)
- 3 ounces pitted olives (Kalamata and green, halved)
- 3 tablespoons minced red onion
- 4 to 5 garlic cloves (minced)
- 1 tablespoon fresh thyme leaves
- 2 teaspoons dried oregano

- Preheat the oven to 425°F. Lightly brush a 9 ½ x 13-inch baking dish with olive oil.
- Pat the fish dry and season both sides with salt and pepper. Place the fillets in the dish and squeeze lemon juice over the top.
- In a mixing bowl, combine cherry tomatoes, olives, red onion, garlic, thyme, oregano, salt, pepper, and 3 tablespoons olive oil. Toss gently.
- Spread the tomato and olive mixture evenly over the fish.
- Bake for 15–20 minutes, depending on the thickness of the fish. The fish is done when it flakes easily with a fork.
- Serve hot with fresh lemon wedges and your choice of sides like couscous, lemon rice, or a crisp salad.
