- 4 medium sweet potatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 ripe avocado, diced
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C). Wash the sweet potatoes and pierce them with a fork. Bake on a baking sheet for 45-60 minutes until tender.
- In a mixing bowl, combine black beans, corn, cumin, garlic powder, salt, and pepper. Mix well.
- Prepare lime crema by mixing Greek yogurt (or sour cream) with lime juice; season with salt and pepper.
