  • 4 large russet potatoes, peeled and diced
  • 6 slices of bacon, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • Salt and ground black pepper to taste
  • ½ cup sour cream for topping
  • ¼ cup fresh chives for garnish

Instructions

  1. In a large pot, boil diced potatoes until tender, about 15 minutes. Drain and set aside.
  2. In the same pot, cook chopped bacon over medium heat until crispy. Remove bacon and leave grease.
  3. Sauté onion in bacon grease for about 5 minutes, then add minced garlic and cook for another minute.
  4. Add cooked potatoes back into the pot with chicken broth; simmer for 10 minutes. Mash some potatoes gently for texture.
  5. Stir in heavy cream and reserved bacon, then gradually mix in shredded cheese until melted. Season with salt and pepper.
