  • 2 cups vegetable broth
  • 1 medium zucchini, diced
  • 1 medium red bell pepper, diced

  • 2 tablespoons fresh lemon juice

Instructions

  2. Toss zucchini, red bell pepper, and cherry tomatoes on a baking sheet with olive oil, salt, and pepper. Roast for 20-25 minutes.
  3. In a medium pot, bring vegetable broth to a boil. Add orzo and cook until al dente (8-10 minutes). Drain and return to pot.
  4. Sauté minced garlic in olive oil for about 30 seconds in a small skillet.
  5. Stir lemon zest and juice into the orzo along with sautéed garlic. Fold in roasted vegetables gently.
  6. Serve warm garnished with fresh parsley.
