  • 250g All-Purpose Flour
  • 50g Icing Sugar
  • 120g Unsalted Butter (cold)
  • 1 large Egg
  • 4 Egg Yolks
  • 100g Caster Sugar
  • 125ml Lemon Juice
  • 75g Unsalted Butter (room temperature)

Instructions

  1. Prepare the shortcrust pastry by mixing flour, icing sugar, and salt in a bowl. Rub in cold butter until crumbly, then add the egg and mix until combined. Wrap in plastic wrap and chill for 30 minutes.
  2. Preheat your oven to 180°C (350°F).
  3. Roll out the chilled dough and cut circles to fit tartlet tins. Press into the tins and prick with a fork.
  4. Bake for about 15 minutes until golden brown. Allow to cool.
  5. For the lemon curd filling, whisk egg yolks, caster sugar, and lemon juice over medium heat until thickened. Stir in room-temperature butter until melted.
  6. Fill cooled tart shells with lemon curd and refrigerate for at least an hour before serving.
