 - 115 grams butter
 - 3/4 cup plain white flour
 - 2 eggs
 - 2 tablespoons lemon juice
 - 2 tablespoons lemon zest
 - 1 heaped cup icing sugar
 - 4 teaspoons lemon zest
 - 1/3 cup lemon juice
 
Instructions
- Preheat the oven to 170°C (335°F) and prepare a baking tin by lining it with baking paper.
 - Cream together butter and sugar until pale and fluffy.
 - Mix in flour and salt until combined.
 - In a separate bowl, whisk eggs, lemon juice, and zest; then combine with the creamed mixture.
 - Pour into the prepared tin and bake for 20-25 minutes until golden brown.
 - Allow to cool before preparing the glaze by mixing icing sugar, lemon zest, and gradually adding lemon juice until smooth.
