  • 3/4 cup plain white flour

  • 1 heaped cup icing sugar
  • 4 teaspoons lemon zest
  • 1/3 cup lemon juice

Instructions

  1. Preheat the oven to 170°C (335°F) and prepare a baking tin by lining it with baking paper.
  2. Cream together butter and sugar until pale and fluffy.
  3. Mix in flour and salt until combined.
  4. In a separate bowl, whisk eggs, lemon juice, and zest; then combine with the creamed mixture.
  5. Pour into the prepared tin and bake for 20-25 minutes until golden brown.
  6. Allow to cool before preparing the glaze by mixing icing sugar, lemon zest, and gradually adding lemon juice until smooth.
