Ingredients

Scale
  • ½ cup unsalted butter
  • 1¼ cups granulated sugar
  • ¾ cup buttermilk
  • 2 tablespoons lemon zest
  • ½ cup fresh blueberries
  • 8 oz full-fat cream cheese

Instructions

  1. Preheat the oven to 350°F (177°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a large bowl, beat softened butter until creamy. Add sugars and oil; mix until light and fluffy. Incorporate eggs and vanilla.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually mix dry ingredients into the wet mixture along with buttermilk, lemon zest, and juice.
  4. Toss blueberries in flour to prevent sinking; gently fold into the batter.
  5. Divide the batter among prepared pans and bake for 22–26 minutes until a toothpick comes out clean. Cool completely before frosting.
  6. For the frosting, beat cream cheese and butter together until smooth; gradually add sugar and flavorings until fluffy.
  7. Assemble by layering cakes with frosting in between; frost the top and sides as desired.
