Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
  • Cream the butter and sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using a hand mixer or stand mixer.
  • Add the eggs and lemon: Beat in the eggs, one at a time, followed by the lemon juice and zest. Mix until well combined.
  • Combine the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the blueberries: Gently fold in the blueberries using a spatula, being careful not to crush them.
  • Scoop and bake: Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
