Perfect for weeknight dinners, brunch, or summer gatherings, this easy-to-make recipe features oven-baked salmon, a rich herb-infused butter glaze, and toasted sandwich rolls for the perfect balance of freshness and richness.

Ingredients

Scale

For the Salmon:

  • 2 lbs salmon fillets (wild-caught preferred)
  • 2 tablespoons avocado oil or olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

For the Lemon Basil Butter:

  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 handful fresh basil, chopped
  • 1 teaspoon minced garlic (optional)
  • Additional salt and pepper to taste
  • 1 lemon, thinly sliced (for topping, optional)

For the Rolls:

  • 4 sandwich rolls (brioche, ciabatta, or hoagie)
  • Extra fresh basil for garnish
  • Optional toppings: arugula, avocado slices, aioli, or pickled onions

Instructions

Step 1: Prepare the Salmon

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet, skin-side down.
  3. Drizzle olive oil over the salmon, then season with salt and black pepper.

Step 2: Bake the Salmon

  1. Bake the salmon for 10 minutes, allowing it to partially cook while staying moist.

Step 3: Make the Lemon Basil Butter

  1. In a small bowl, whisk together melted butter, lemon juice, chopped basil, minced garlic, salt, and pepper.

Step 4: Add the Butter Mixture & Broil

  1. Remove the salmon from the oven and spoon the lemon basil butter mixture over the top.
  2. Top with thin lemon slices (optional) for extra citrus aroma.
  3. Set oven to broil on high and return salmon to oven for 5-6 minutes until golden.

Step 5: Assemble the Rolls

  1. Let the salmon cool slightly, then flake it into large chunks.
  2. Lightly toast sandwich rolls to prevent sogginess.
  3. Layer the flaked salmon onto the toasted buns, adding any extra toppings like arugula, avocado, or aioli.
  4. Serve warm and enjoy!
