  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 large eggs
  • 6 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried culinary lavender
  • ½ cup powdered sugar (for dusting)
  • 2 tablespoons freshly grated lemon zest
  • ¼ teaspoon lavender extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, beat together softened butter, flour, powdered sugar, and vanilla until crumbly. Press into a greased 9×13 inch baking dish and bake for about 20 minutes.
  3. While the crust bakes, prepare lavender sugar by whisking together sugar and dried lavender.
  4. In a mixer bowl, combine eggs and lemon juice. Gradually add lavender sugar mixture along with remaining filling ingredients until well combined.
  5. Pour filling over baked crust and bake for an additional 25-30 minutes until slightly cracked on top.
