  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 3/4 cup sour cream
  • 1 Tbsp plus 1 tsp dried lavender
  • 1/2 cup unsalted butter
  • 1 large egg + 1 egg yolk
  • 1/2 cup packed light brown sugar (for streusel)
  • 1/2 cup chopped walnuts (for streusel)
  • 1 tsp ground cinnamon (for streusel)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Prepare the streusel by mixing brown sugar, walnuts, and cinnamon in a bowl.
  3. In another bowl, whisk together flour, baking powder, and baking soda.
  4. Cream butter and sugar until fluffy; add honey, eggs, and lavender.
  5. Mix in half of the sour cream and flour mixture; then add the rest until combined.
  6. Layer half the batter in the pan, sprinkle with half the streusel, add remaining batter, and top with remaining streusel.
  7. Bake for 40-45 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing.
