  • 9 lasagna noodles
  • 15 ounces ricotta cheese
  • 1 ½ cups fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese

Instructions

  1. Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain and cool.
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, ½ cup Parmesan cheese, salt, and pepper.
  3. Preheat oven to 375°F (190°C). Spread marinara sauce in the bottom of a baking dish.
  4. Spread filling along each noodle and roll tightly; place seam-side down in the dish.
  5. Top with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly.
