  • 1/2 cup (113 g) unsalted butter, melted
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3 (8-ounce) packages (681 g) full-fat cream cheese, very soft
  • 1 cup (227 g) full-fat sour cream
  • 1 and 1/4 cups (249 g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 Tablespoons (24 g) key lime zest
  • 3 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1/4 cup (57 ml) heavy cream, room temperature
  • 1/2 cup (113 ml) key lime juice
  • 2 teaspoons all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with aluminum foil and spray with nonstick spray.
  2. In a bowl, mix graham cracker crumbs, sugar, melted butter, ginger, and salt. Press into the prepared pan and bake for 10 minutes.
  3. Reduce oven temperature to 325°F (163°C). Beat cream cheese and sour cream until smooth; add sugar, vanilla extract, and key lime zest. Mix in eggs one at a time.
  4. Fold in heavy cream, key lime juice, and flour until just combined. Pour over crust.
  5. Bake for 38-40 minutes until edges are set but center jiggles slightly. Cool at room temperature for one hour, then refrigerate for at least 5 hours before serving.
