Description

This Pineapple Cheese Pie is a creamy, refreshing, and tropical dessert made with whipped cream cheese, pineapple Jell-O, crushed pineapple, and a flaky pie crust. With its smooth, mousse-like texture and vibrant pineapple flavor, this pie is perfect for summer gatherings, holiday dinners, and easy weeknight desserts.

Ingredients

Scale

For the Pie Filling:

  • 1 (20 oz) can crushed pineapple (drained, juice reserved)
  • 1 (6 oz) package pineapple Jell-O
  • 1 (12 oz) container whipped cream cheese
  • 1 (8 oz) container frozen whipped topping (thawed)

For the Crust:

  • 1 pre-baked 9-inch pie crust (store-bought or homemade)

Instructions

Step 1: Prepare the Pineapple Gelatin Mixture

  1. Drain the crushed pineapple, reserving the juice.
  2. Heat the reserved pineapple juice in the microwave for 1 minute.
  3. Stir in the pineapple Jell-O until completely dissolved. Let it cool slightly.

Step 2: Make the Creamy Filling

  1. In a large mixing bowl, beat the whipped cream cheese and whipped topping until smooth and fluffy.
  2. Fold in the crushed pineapple and mix gently.
  3. Slowly pour in the cooled gelatin mixture, stirring until fully combined.

Step 3: Assemble & Chill the Pie

  1. Pour the filling into the pre-baked pie crust, smoothing the top with a spatula.
  2. Refrigerate for at least 4-5 hours, or until set.

Step 4: Garnish & Serve

  1. Add extra whipped topping, toasted coconut, or pineapple slices for decoration.
  2. Slice and serve chilled for a creamy, tropical treat.

Notes

  • For a no-bake version, use a graham cracker crust instead of a traditional pie crust.
  • For extra texture, add chopped pecans or macadamia nuts to the filling.
  • For a dairy-free version, use vegan cream cheese and coconut whipped topping.
