  • 2 cups shredded pepper jack cheese
  • 4 ounces softened cream cheese
  • 2 jalapeños, diced (seeds removed)
  • ½ cup diced green onion
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup buttermilk
  • 2 cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together pepper jack cheese, cream cheese, jalapeños, and green onions until well combined.
  2. Roll the mixture into small balls and place on a foil-lined baking sheet. Refrigerate until ready to dredge.
  3. Set up three shallow dishes: one with flour, one with whisked egg and buttermilk, and one with breadcrumbs mixed with seasonings.
  4. Dredge each ball first in flour, then dip it in the egg mixture, followed by rolling it in breadcrumbs. Repeat for double coating.
  5. Heat vegetable oil in a frying pan over medium heat and fry about 4 to 6 balls at a time until golden brown on all sides.
  6. Drain on paper towels before serving.
