For the Cabbage Rolls:
- 1 large green cabbage (2.5–3 lbs)
- Salt (for boiling water)
- Cooking spray or oil (for greasing the baking dish)
For the Filling:
- 2 tbsp olive oil
- 1 small onion, finely chopped (approx. 1 heaping cup)
- 1 lb hot Italian sausage, casings removed
- ¾ lb ground chuck
- ¾ cup converted white rice (parboiled rice)
- ½ cup freshly grated Parmesan cheese
- ½ cup water
- ¼ cup chopped fresh parsley
- Freshly ground black pepper to taste
For the Sauce:
- 1 (28-ounce) can crushed tomatoes
- ½ cup water (to rinse out the tomato can)
- 2 tbsp tomato paste
- 1 tbsp Calabrian hot pepper paste (or 1 tsp crushed red pepper flakes)
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and freshly ground black pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
Step 1: Prepare the Cabbage
- Bring 4 quarts of salted water to a boil in a large pot.
- Core the cabbage by cutting a deep circle around the base to help loosen the leaves.
- Place the cabbage head into the boiling water and cook for 10 minutes.
- Transfer to a colander and let it cool.
- Once cool, peel off 12 outer leaves carefully.
- Trim the thick ribs from the base of each leaf in an upside-down “V” shape to make rolling easier.
Step 2: Cook the Rice
- In the same boiling water, add the uncooked rice.
- Cook for 6-7 minutes until al dente.
- Drain the rice in a sieve, rinse under cold water, and let it cool.
Step 3: Make the Filling
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and cook for 3-4 minutes until softened.
- Transfer half of the onion to a large mixing bowl.
- In the mixing bowl, add:
- Italian sausage
- Ground beef
- Cooked rice
- Parmesan cheese
- Water
- Chopped parsley
- Black pepper
- Mix until well combined.
- Divide the mixture into 12 equal portions.
Step 4: Assemble the Rolls
- Lay a cabbage leaf flat and place a portion of filling in the center.
- Fold the bottom flaps over the filling.
- Fold in the sides, then roll tightly from the bottom up.
- Place seam-side down in a greased 13×9-inch baking dish.
Step 5: Make the Sauce
- In the same skillet used for onions, add:
- Crushed tomatoes
- Water
- Tomato paste
- Calabrian chili paste
- Garlic
- Italian seasoning
- Salt and black pepper
- Simmer for 5 minutes, stirring occasionally.
Step 6: Bake the Cabbage Rolls
- Pour the tomato sauce over the cabbage rolls.
- Cover the dish tightly with foil.
- Bake at 350°F for 1 hour – 1 hour 15 minutes, until the filling reaches 165°F.
- Remove from the oven and let rest for 5 minutes.
- Garnish with fresh parsley and serve warm.

Substitutions:
- For a leaner option: Use ground turkey or chicken instead of beef and sausage.
- For a gluten-free version: Replace white rice with brown rice or cauliflower rice.
- For a spicier dish: Increase the Calabrian chili paste or add extra red pepper flakes.
