  • For the Mint Frosting: 1 cup powdered sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream
  • ½ teaspoon peppermint extract
  • For the Ganache: 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix melted butter and sugar until combined, then add eggs and vanilla.
  3. In another bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually mix into wet ingredients.
  4. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
  5. Cool completely before spreading mint frosting made from beating together powdered sugar, butter, cream, peppermint extract.
  6. Prepare ganache by melting chocolate chips with heavy cream on low heat until smooth; pour over frosted brownies.
  7. Allow ganache to set before cutting into squares.
