  • 2 pounds beef chuck (cut into 1-inch cubes)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 4 carrots (sliced)
  • 3 potatoes (cubed)
  • 2 stalks celery (chopped)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season the beef cubes with salt, pepper, and flour. In a large pot over medium-high heat, sear the beef in batches until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion until softened; add minced garlic and cook for an additional 30 seconds.
  3. Stir in carrots, potatoes, and celery; sauté for another 5 minutes.
  4. Pour in beef broth and return the seared beef to the pot. Add tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender.
