  • ¼ cup pineapple juice
  • 2 ounces lime juice (juice from 1 lime)
  • 2 tablespoons honey
  • 2 teaspoons sriracha
  • 5 garlic cloves, minced
  • 1-inch fresh ginger, minced

For the Grilled Salmon

  • 4 salmon fillets (46 ounces each)
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 teaspoons cracked black pepper

Instructions

  1. Prepare the Pineapple Salsa: Combine diced pineapple, red onion, jalapeño, red bell pepper, lime juice, and salt in a bowl. Stir and set aside.
  2. Make the Pineapple Glaze: Whisk together cornstarch, soy sauce, pineapple juice, lime juice, honey, sriracha, garlic, and ginger. Heat in a saucepan over medium heat, whisking constantly, until thickened. Remove from heat.
  3. Grill the Salmon: Preheat the grill to 450–550°F. Blot salmon fillets dry with paper towels. Brush with olive oil and season with salt and pepper. Place salmon skin-side down on the grill and cook for 5–7 minutes with the lid closed. Flip and grill for 2 more minutes until the internal temperature reaches 130°F.
  4. Assemble: Let salmon rest for 3–5 minutes. Brush with pineapple glaze and top with pineapple salsa. Serve immediately.
