  • 3/4 cup dry quinoa
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup fire-roasted corn
  • 1 pint cherry tomatoes, halved
  • 1 medium avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup pumpkin seeds (pepitas)
  • For the Dressing: Greek yogurt, mayonnaise, chipotle adobo sauce, lime juice, honey or maple syrup

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth with adobo sauce and spices. Bring to a boil.
  2. Reduce heat to low and cover; simmer for 12-15 minutes until fluffy.
  3. Transfer quinoa to a large bowl to cool for about 10 minutes.
  4. Whisk together dressing ingredients in another bowl until smooth.
  5. In the bowl with cooled quinoa, add black beans, corn, tomatoes, avocado, cilantro, and pumpkin seeds. Toss gently to mix.
  6. Drizzle dressing over the salad; stir well to coat.
